God's Perfect Food: The Idaho Potato

When it comes to good eatin', there's nothing, and I mean nothing, that beats the Idaho Russet potato. You just can't go wrong. Baked, oh, yes, cool cats! French fries, divine! Scalloped or Au Grautin, fab! Mashed, the ideal comfort food. Twice baked, ooh la la!

When I found this mammoth 1.5-pound baby at Brooklyn Heights Greenmarket, I found true love. After baking for nearly 90 minutes, adding a couple dollops of butter, salt & pepper, we enjoyed a full meal together. Sometimes the simplest things bring the greatest pleasure. *
